First Week: Wholesome Yum Meal Plan

Last week I mentioned that I had started a Keto Meal Plan from Wholesome Yum, and I started out strong but immediately discovered a big problem.

I hadn’t understood that you just made SOME of the week’s food, not all.  So I bought the entire grocery list and discovered Monday night, when I cooked the first meal, that each meal made enough for four people!

So I actually only cooked Sunday (the muffins) and Monday night.  I made Asparagus Stuffed Chicken, and I followed all the steps.

I mean, I even bought a meat tenderizer hammer thing so I could beat the chicken.  We didn’t own one, had never used one, but I was intent on following the plan exactly.

The first thing I learned is that beating chicken will spray the whole kitchen with chicken juices.  *facepalm*

But here’s the before:

Can you see why I had almost all of the week’s food in one cooking session?  Friday and Saturday night, we ate at my parents’ and my in-laws’.  Wednesday I was not Keto – I ate a ton of Tootsie Rolls and spaghetti.  This was planned though, not spur of the moment, and I’ve gotten right back on board.

I ate this chicken for five? meals, and I still have half a breast left that I’m working on today!

And it was one of the most complicated recipes I’ve done (other than baking).  I know, I know, it’s straightforward and stuff, but so many steps!

Anyway, here’s the finished chicken:

I took a picture as soon as I remembered, but I had already eaten half a breast.  *smile*

So far, I’m liking the meal plan. It made shopping straightforward, and today I took time to Instapot some chicken for shredded chicken – multiple recipes use it this week.  I also baked more muffins.  I think this week was pancakes for breakfast,  but I don’t like cooking when I’m rushing to get ready for work.
