I had started a Keto Meal Plan from Wholesome Yum, and so far it’s going well. It’s really nice to not have to figure out what to cook!
I ran into a different issue this week. The food I made went bad before the week was over! The recipes make so much food I can’t eat them fast enough.
I only made two recipes this week! I don’t care for ranch flavored things, so the casserole I made was just okay, but the muffins were delicious.
I’m still working on using up supplies I inadvertently over bought for the first week.
But the recipes are solid and easy to follow, and she gives you a variety of them to choose from so it’s not like you’re tied to one plan.
For this upcoming week, I baked chicken thighs, and I remembered to use my thermometer to check and make sure they’re cooked all the way. It’s nice to do a fair bit of meal prep on Sunday before the week begins. I burnt my muffins though.
She gave a recipe for egg casserole of some sort, but I didn’t feel like it. These muffins are so good! But I don’t know if they’ll be any good burnt.
I rarely have plans on Sunday so I have time to work on it and not be rushed or stressed. It’s much easier to move my cooking to a less hectic day than try to cook in the barely two hours I have after work before bed.
It’s also really nice to be able to buy all of the ingredients I need on Saturday and not have to worry about running out of something.
