Keto: Tortilla

I’m on a Ketogenic Diet, and it’s going wonderfully.  I’m a lot more energetic, and I’m down 20 lbs with no effort at all other than cooking which I  do anyway with our food allergies/intolerances.

Best of all, I’m never hungry!  It’s ridiculous.  I set a timer to remember to eat.

The biggest thing I’ve missed though, is tortillas.  Bread, yeah, I miss it, but 90 second bread or one of the variants is generally enough of a stand in.  Most days I don’t eat any.

But I ADORE tacos, and lettuce wraps just weren’t cutting it.

I tried quite a few ‘tortilla’ recipes, but this is the one I use regularly now.  It’s easy, can be done in the microwave alone (although I tend to fry the finished wrap in a pan to brown it a bit), and is only three ingredients, an egg, 1/2 tsp psyllium husk powder, and 2 tablespoons almond flour.  (+ salt which I always forget!)

The original recipe from Low-Carb, So Simple!

First, I mix the Psyllium Husk Powder and almond flour together so the psyllium won’t clump horribly.

Once mixed, I add an egg and stir it all into glop.  Yes, that’s my technical term for it.

Work quickly!   It thickens as it sits.  I spray a plate with PAM.

Dump the glop on the plate and spread it into a tortilla shape with a fork.

Microwave for 1 minute 30 seconds.  My microwave is ancient, so YMMV… go with 30 second increments until you get a kind of foam/rubbery tortilla.  It will be wet on the underside, which is why I usually pan fry them.

I put a pan on high and just flip it a few times while it’s hissing and popping to dry it out and brown it a little.

And insert filling of your choice!

In this case I made tuna salad and added dill pickle slices.  🙂  And, hey, like my phone?  It’s totally ’90’s.

Super fast, super easy, and the entire process took me maybe ten minutes, and that’s with trying to get photos of what I’m doing.  (Spoiler: I’m not actually a photographer.)
